Ramen

Writer's picture: Two SoymatesTwo Soymates

Week Two of our Food Atlas Challenge was Japanese food 🇯🇵! This was the Ramen we made (for dessert we had these Matcha Cookies).

This will make 4 servings.

Ingredients:

  • 1 Pack of Thin Wonton Egg Noodles

  • 3 quarts Chicken stock

  • 3 Tablespoons Soy sauce

  • 3 Tablespoons Maggi

  • 1 Tablespoon Mirin

  • Salt to Taste

  • Drizzle of Sesame oil

  • Green Onions and Cilantro for garnish

Directions:

  1. Make your own chicken stock or use a good quality chicken stock. We recommend low sodium.

  2. Add soy sauce, maggi, and mirin. Salt as needed.

  3. In a separate pot, boil 4 qt of water. Place noodles in loosely and cook for 2-3 minutes.

  4. Serve noodles into bowls and ladle broth over. Garnish with green onions and cilantro.

  5. Drizzle a small amount sesame oil over the top (a little goes a long way!)

We topped ours with crispy pork, but you can also top with grilled chicken, boiled pork or pork roast. Additionally you can add poached eggs, ramen eggs, sunny up or jammy eggs. We’ll post our easy jammy ramen eggs soon!
