Matcha Cookies

For Week Two of our Food Atlas Challenge we did Japanese Food! We made ramen and these amazing Matcha Cookies. They were slightly crisp on the outside and perfectly soft on the inside, bursting with that delicious earthy matcha flavor.


This recipe will make about 20 cookies.


Ingredients:

  • 1/2 Cup Unsalted Butter, Room Temp

  • 1 Cup Sugar

  • 1 Teaspoon Baking Powder

  • 1/8 Teaspoon Baking Soda

  • 1/2 Teaspoon Salt

  • 2 Eggs

  • 2 Cups Flour

  • 3 Tablespoons Matcha

    For Rolling:

  • 1/4 Cup Granulated Sugar

  • 1/2 Cup Powdered Sugar

  • 1 Teaspoon Matcha


Directions:

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. Cream together butter, sugar, baking powder, baking soda, and salt.

  3. Add in eggs and mix until well combined.

  4. In a separate bowl, sift matcha into the flour then pour in with butter mixture, slowly mixing until all ingredients are incorporated.

  5. Sift the teaspoon of matcha and powdered sugar into a small bowl.

  6. Using a cookie scoop, scoop 1.5 tbsp balls of dough. Roll the balls in the granulated sugar first, then the matcha powdered sugar.

  7. Place on your baking sheet and bake for 11 minutes.
