Lembas Bread

Our version of Lembas Bread we made for our Lord of the Rings movie night. One bite might not fill a grown man, but one piece is surprisingly filling! The bread is mildly sweet with crisp edges and a fluffy inside. It pairs wonderfully with spiced tea. Perfect to curl up with to watch Lord of the Rings or read the book!


Ingredients:

  • 2 & 1/2 Cups Flour

  • 1/3 Cup Brown Sugar

  • 1 Teaspoon Baking Powder

  • 1/2 Teaspoon Baking Soda

  • 1/2 Teaspoon Salt

  • 1 Teaspoon Cinnamon

  • 1/2 Teaspoon Nutmeg

  • 2/3 Cup Heavy Whipping Cream

  • 1/2 Cup Unsalted Butter, softened

  • 1/2 Teaspoon Vanilla Extract

  • 1/2 Teaspoon Almond Extract

  • 2 Tablespoons Honey

  • 3 Eggs

  • 1/3 Cup Dried Cranberries

  • 1/3 Cup Chopped Almonds (or nut of choice)


Directions:

  1. Preheat oven to 425°F & grease baking dish, we used an 11x7 dish.

  2. In a large bowl combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. In a separate bowl mix the heavy whipping cream and softened butter. Add the almond and vanilla, then mix in honey. Finally beat in the eggs.

  4. Combine wet and dry mixtures. Stir in cranberries and almonds.

  5. Spread into your prepared dish and bake for about 12 minutes or until toothpick comes out clean.
